Delicious Healthy Vegan Pasta Sauce
2 cans of tomatoes (whole)
1 can of white kidney beans
1 cup zucchini (chopped)
1 green and red pepper (chopped)
1 cup of spinach
Half or a full onion (depending on your love of onions) chopped
Minced hot pepper (some like it hot) or chili powder
I minced clove of garlic
Turmeric
Basil
Rosemary
Thyme
A bay leaf
A pinch of sugar
In a blender, puree your can of tomatoes. Using the whole tomatoes has a lot less salt than using already pureed tomatoes.
Separate half of your can of kidney beans. We’re not using tomato paste in this sauce since it’s very salty. Instead, using a potato masher, mash the half of the white kidney beans the best you can. We will use these as a thickener.
Preheat your oven to 350ºC
Fry your vegetables in a pan in canola oil or butter (just a dollop) and we’re going to fry them for 4-5 minutes on a high heat, just to make them glow and crunch nicely before putting them in the sauce.
Place your tomatoes, vegetables and garlic as well as your kidney bean puree and whole rest of them in a large pot. Start to cook at med heat. Add some turmeric, from a teaspoon to a tablespoon. Turmeric is very healthy and blends in well with tomato dishes. Add the same amount of basil. Go a bit easier on the rosemary and thyme, for they are really aromatic. Spices are not only delicious, but they really are healthy, and either help your immune system, clear your throat, aid digestions etc.
Add spinach
As soon as your sauce as boiled for 10 minutes, lower your heat and simmer for 20 minutes. Add one to two teaspoons of sugar. Tomatoes are acidic and the sugar balances the acid and makes is easier on your mouth and stomach.
Add bay leaf
Place your pot in your heated oven and forget it for about an hour.
Remove from oven with mitts! Serve now or store in fridge for later!
Enjoy!

Appearances: Clockwork
Bio: Lenalie is of the Echo line, and she is very similar to her 'brother', Lennox. She comes back from 'school' and is soon to find out what job they have given her. Energetic and very much alive, she hopes to be a town protector. She ends up getting the job and goes out with Bruno-Victor, an amazing piece of technology, who teaches her how to use weapons and skateboards, so they can get around the town, which is infested with creatures of the destroyed Apocalyptical world. In Clockward, there are no more humans and everyone is implanted with the memories of the past, and they are made to create more 'lives' only the ones who are truly living are few, and most of them live by programmes. Lena and Leno are a bit different, and they must learn this and stuff (I really didn't write a lot, but I based my character off this pic).
